Nong Poonsukwattana’s restaurant is one of Portland’s most lauded culinary destinations with a story rooted in humble beginnings. Nong worked as a cook at Pok-Pok for five years after moving from Bangkok, eventually starting her own food cart, which after much success, landed her a brick and mortar (now with two locations). Her Khao Man Gai, a Thai Chicken & Rice dish, is one of our favorite bites to dream about - and now you can recreate this plate of joy at home.

Nong’s sauce is a special family recipe made from all natural ingredients including soy beans and soy sauce mixed with fresh ginger, garlic, and chili.

Ingredients:

Makes 4 - 5 Servings

Ingredients Part One - Chicken:

4 quarter legs of chicken

8 cups of water

1 tsp salt

2 tsp sugar

1 whole garlic

1 cup of ginger

3 pandan leaves (optional)

Ingredients Part Two - Rice :

1 cup of chicken skins (will make about 2 tbsp of chicken fat)

2 tbsp of chopped garlic

1/3 cup of chopped shallots

1/3 cup of minced ginger

3 cup of jasmine rice

3 cup of chicken broth

3 pandan leaves

Ingredients Part Three - Soup:

4 cups of chicken broth

2 cups of Chinese winter squash

2 tbsp of soy sauce

1 tsp of ground white peppers

2 tbsp of chopped cilantro

2 tbsp of chopped green onion
