Serra Provisions - “Responsibly Sourced, Italian Inspired.”
Serra Provisions, simply put, is an Italian inspired line of handcrafted, all-natural food products, utilizing local, seasonal ingredients from small farms in and around New York State. Our products are free from GMOs, sugars, and other commercially produced stabilizers, or preservatives.
Started by my wife and I, we wanted to bring a product/lifestyle brand to market that embodies the traditions and history of regional Italian food, with the very best quality ingredients that we can source.
Having spent the last 20 years working in Michelin-star restaurants under some of the best chefs in the country, we have learned about food in a way never before imagined, and relying almost completely on our local, family owned and operated farming communities. Our goal is to provide you with gourmet food products rooted in sustainability and tradition, while sourcing eco friendly packaging alternatives.
From our all-natural, artisanal pastas, to our grass-fed, European style butter blends, all of our products are made in house, using responsibly sourced ingredients, and old world cooking and preservation methods. We are taking a modern, forward thinking approach to tradition.
Here is a simple recipe for our grass fed beef polpette(meat balls) that is a delicious and easy addition to the products that we have provided.

Grass Fed Beef Polpette
Ingredients:
1 lb Grass Fed Beef
1 cup Day old sourdough bread (no crust)
2 cloves fresh garlic, chopped fine, or grated with a microplane
¼ cup fresh flat leaf parsley (rough chopped)
¼ cup freshly grated parmigiano reggiano
2 tablespoons extra virgin olive oil
2 teaspoons sea salt
1 teaspoon chili flake
½ teaspoon fresh ground fennel seed
2 ea large eggs
Finish With:
½ jar your favorite Serra Provisions sauce
Procedure:
Preheat oven to 400 degrees fahrenheit.
Combine all ingredients (sans sauce) in a bowl and mix by hand until well combined, almost paste like.
Heat a small saute pan, add ½ tablespoon of extra virgin olive oil, and sear a little patty of the mixture to check for seasoning. Add more salt if needed.
Using a small ice cream scoop, or two spoons, scoop out 3 tablespoon size balls of the meat mixture on to a metal oven safe tray.
After you have scooped all of the mixture, using your hands, roll the balls smooth and compact and place them back on the tray.
Place the balls on the middle rack of your preheated oven and cook for about 15 minutes. The idea is to brown the outside versus cook them thoroughly. Remove from the oven to cool
Once cool, place in a sauce pot large enough to hold them, and cover with your favorite Serra Provisions tomato sauce.
Cover with a lid and simmer on low for about 30-45 minutes.
Serve over your favorite Serra Provisions organic pasta, and on a toasted roll with some melted mozzarella!!!
